The history of Louis Tollet goes back to the 1950s. Louis Tollet was a renowned restaurateur in the Champagne region. His pursuit of perfection in gastronomy earned him an excellent reputation. He created dishes that pair wonderfully with the champagnes of the Charles Mignon house.
The copper-coloured capsule was chosen as a nod to the copper pans that were used so often in Louis Tollet's kitchen. Louis Tollet's granddaughter, Manon Mignon, honours him by naming a Champagne range after him. Manon and Guillaume Mignon are the daughter and son of Laurence Mignon.
The Charles Mignon house makes this Champagne with respect for the rich Champagne tradition, but does make full use of the advantages that modern vinification techniques bring. The house protects insect life in line with the HVE standard.
